Ocean Trout with Garlic & Soy

Ingredients

1 side of Ocean Trout

1/2 teaspoon kosher salt

1/4 teaspoon white pepper

Lemon wedges

Garlic & Soy Sauce

1 teaspoon extra-virgin olive oil

3 cloves garlic, peeled and roughly chopped

1/2 teaspoon sugar

3 tablespoon light soy sauce

Preparation

Heat oven to 350 degrees.  Line the tray with baking paper.  Lightly oil the baking paper, place the trout skin-side down on the tray and sprinkle with salt and pepper.  Bake for 10-12 minutes.  To make the sauce, heat the olive oil in a small pan over medium heat and sauté the garlic until it starts to brown.  Add the sugar and continue to sauté until the garlic is golden brown.  Remove from heat and pour the soy sauce into the pan, stir until the sugar is dissolved.  Serve the trout with lemon wedges and the garlic and soy sauce on top or on the side.
