General Information:

Farm raised catfish (Ictalurus punctatus) is a U.S. seafood success story.  Most catfish farms are located in the South from Arkansas to Louisiana.  The fish are harvested with they reach market size (1 to 1.5 pounds) and shipped live in tank trucks to the processing plants.  Because it is farm raised, fresh catfish meat is always firm and white with a sweet mild taste.  Catfish are bottom feeders so watch out for "wild caught catfish;  it will not taste the same.

Recipes:

CAJUN CATFISH

 
  • 1 lb. catfish
  • 1 egg, beaten
  • 1 pkg. Golden Dipt Oven Easy Cajun Style Bakeable Coating
 

 
  1. Preheat oven to 375 degrees F.
  2. Dip fish fillets in beaten egg; shake off excess.
  3. Roll fillets in bakeable coating to cover evenly.  Place on foil-lined baking sheet.
  4. Bake 15 to 20 minutes or until fish flakes easily with a fork.
     SERVES 4
