Flounder. Flounder are a very lean fish containing less than 2%
fat. More than a dozen species of flatfish are sold under the flounder
name. The most common species are yellowtail flounder, lemon sole, Dover
sole, English sole and fluke. The fish has a sweet, mild taste and a
delicate texture.
Because flounder is very delicate, this fish should be pan-fryed or baked until
the flesh is just opaque, usually only a few minutes with thin fillets.
