General Information:

Flounder.  Flounder are a very lean fish containing less than 2% fat.  More than a dozen species of flatfish are sold under the flounder name.  The most common species are yellowtail flounder, lemon sole, Dover sole, English sole and fluke.  The fish has a sweet, mild taste and a delicate texture.  
Because flounder is very delicate, this fish should be pan-fryed or baked until the flesh is just opaque, usually only a few minutes with thin fillets.

Recipes:

LEMON BUTTER FLOUNDER FILLETS

 
  • 1/2 cup Golden DiptŪ Lemon Butter Dill Cooking Sauce
  • 1 1/2 lbs. flounder fillets
  • 1 lemon, cut into wedges
  • dill
Preheat oven to 425° F.  Place fish in a single layer in a 9"x13" baking dish.  Pour Golden DiptŪ lemon butter cooking sauce evenly over fish.  Bake for 8 to 10 minutes.  Fish is done when fish is opaque and flakes easily with a fork.  Garnish with lemon wedges and dill.
