General Information:

Mahi mahi is a Hawaiian favorite.  The fish occurs in all tropical and subtropical seas and has been found as far North as Prince Edward Island.  Mahi mahi have a tremendous growth rate, as much as 5 pounds per month, and grow to over 70 pounds during their short life span of 3 or 4 years.  The female produces 200,000 to 1,000,000 eggs two to three times per year, guaranteeing the survival of this abundant natural resource.

Recipes:

SWEET SESAME MAHI MAHI

  • 4  8-9 ounce mahi mahi fillets
  • Pineapple chucks
  • 1 red onion
  • 1 lime
  • Fresh Cilantro
  • Sesame oil
  • White sesame seeds
  • Vegetable oil
 
  1. Like many other species, eg walleye, mahi mahi has a darker band of flesh along the lateral line.  This darker flesh has a stronger flavor and we recommend removing it.
  2. Combine the pineapple, red onion lime juice and cilantro in a serving bowl.  Set aside.
  3. Rub each fillet with sesame oil and sprinkle with sesame seeds.  Gently press them in.
  4. In a large non-stick skillet, heat the vegetable oil over medium heat.
  5. Add the fillets, seeded side down.  Cook 4 minutes.
  6. Carefully flip the fillets and cook another 3 to 5 minutes or until just opaque.
  7. Serve with pineapple salsa.
     SERVES 4
