General Information:

Smelt.  Weyand's carries both fresh and frozen dressed smelt.  This popular fish is a favorite throughout the Great Lakes area and is very versatile.  It can be baked, deep fried and pan fried with equally great results!

Recipes:

SALSA & SMELT

  • 3 tablespoons oil, divided
  • 2 pounds smelt, pan-dressed
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 medium tomato, chopped
  • 1/2 green, red, or yellow pepper, chopped
  • 1 can (15oz) black beans, drain and rinse
  • Salt & pepper to taste

Brush 2 tablespoons oil on fish and grilling basket.  Cook fish over hot coals for 10 minutes per inch of thickness or until fish is flaky.  For Salsa, heat remaining oil in large skillet over medium heat.  Add onion, garlic, tomato and bell pepper and sauté for 10 minutes.  Add remaining ingredients; cover, reduce heat and simmer for 5 minutes.  Top smelt with salsa mixture.
