SWORDFISH RECIPES

General Information:

Swordfish as found throughout the world in tropical and temperate seas.  This popular fish is usually sold as steaks and has a firm texture similar to that of beef.

Recipes:

SWORDFISH STEAKS

Use approximately 8 to 10 oz. per person. 

Cook in the same manner you would a beef steak of a similar thickness.  Place under the broiler or on the grill on medium high heat.   Cooking time depends and the thickness of the fillets.   Cook until the meat is a consistent color all the way through;  approximately 8 minutes for a fillet under 1 inch thick, 10 minutes if over 1 inch thick.  Turn the steak over about half way through the cooking time.


BAYOU BLACKENED SWORDFISH 

 
  • 1 1/2 lbs. swordfish steaks
  • 1 tbsp. Old Bay Seasoning
  • 1/4 tsp. ground red pepper
  • 1/4 tsp. black pepper
  • 3-4 tbsp. melted butter or margarine
  • Fresh parsley

 
  1. Heat heavy skillet over medium high heat for at least 3 minutes.
  2. Dip fish in melted butter or margarine
  3. Mix Old Bay and peppers together and sprinkle evenly over both sides of the swordfish.
  4. Cook both sides until blackened (8-10 minutes total cooking time per inch of thickness) or until fish flakes easily with a fork
  5. Garnish with parsley.
