General Information:

Tuna.  Tuna is the number one species of seafood consumed by Americans.  Of the 13 species of tuna only four are sold fresh:  yellowfin, bluefin, bigeye and albacore.  Fresh tuna has a delicious, full flavor and a meat-like texture similar to swordfish and shark.  Tuna is great to barbecue, bake or broil.  When cooked the bright red color of the meat turns ivory.

Recipes:

TUNA STEAK WITH GINGER

  • 1/4 cup light soy sauce
  • 2 tbsp. dark sesame oil
  • 2 tbsp. rice vinegar
  • 1 tbsp. garlic, minced
  • 1 scallion, sliced thin
  • 4 - 8 oz tuna steaks
  • salt to taste
 Combine soy sauce, sesame oil, vinegar, garlic, ginger and scallion together.  Place tuna steaks in a dish.  Brush both side of the steaks with the marinade.  Cover and refrigerate 30 minutes, turning once.  Sprinkle steaks with salt and place on a hot grill.  Cook over a medium hot fire for approximately 10 minutes for each inch of thickness, turning once.  Check with a knife in the middle to verify that the fish in completely cooked.
