General Information:

Walleye, (Stizostedion vitreum) also known as yellow pickerel.  Weyand's carries both fresh and frozen Walleye fillets.  This popular fish is a favorite throughout the Great Lakes area and is very versatile.  It can be baked, broiled and pan fried with equally great results!

Recipes:

WALLEYE SAUTÉ

1 pound walleye fillets
1 cup onions
1 lg green pepper, julienned
2 lg tomatoes peeled and cut into wedges
2 tblsp. vegetable oil
1 cup carrots
1/2 tsp. sweet basil
Salt & pepper to taste
Cut fillets into bite size pieces.  Heat oil in large skillet over medium heat.  Add onions, carrots and peppers; saute for 10 minutes.  Add walleye and remaining ingredients, stirring well.  Cover and reduce heat; simmer 10 minutes or until fish flakes easily and is no longer translucent in the center.
